- Gingersnaps

GINGERSNAPS


1½ c. shortening (I used Crisco Golden)
½ c. molasses
2 tsp. baking soda
1½ c. white sugar (plus additional for coating)
2 eggs
3 tsp. ginger (I would use 4)
2 tsp. cinnamon
3½ c. flour

Mix all ingredients and chill for 1 hour.

Roll into balls and coat in sugar. Flatten with a fork.
Preheat oven to 375°

Place on baking sheet in centre of oven and bake for 12 mins. Allow to cool on baking sheet if you want a crispier cookie.
