TIPS
(i) For anyone who doesn’t know how picky I am, I never eat day old baking so what doesn’t get eaten on the day of baking is put into the freezer in Ziploc bags. If you absolutely have to leave baking out, my spin would be use a tin. Plastic containers bring out too much moisture in baking and alter the texture.
(ii) A number of my recipes call for a stand mixer. I am on my third Kitchen Aid mixer and I truly don't know what I would do without it. I would give up my dishwasher before I would give up my mixer. If you don't have one watch for the sales and treat yourself but in the meantime, a hand mixer or strong arms will also do the trick.
(iii) Currently I have a conventional oven and I always bake in the centre of my oven (third slide from the bottom of the oven). I long for two ovens.
(iv) I always use extra large eggs in my baking.
(v) Unless otherwise noted, flour is all purpose flour, salt is always kosher salt and sugar is white sugar.
